Gluten Free Pizza Dough Recipe
Ingredients
500g gluten-free flour
365g water
45g extra-virgin olive oil
14g fine sea salt
1.5g baking soda
0.5g instant dried yeast
Method
Step 1: Warm 300g water to approx. 35 °C and dissolve the salt into it, then add the yeast, leave to rest for 3 minutes, then stir until dissolved
Step 2: Pour in the olive oil and stir, then add this mixture to the flour and baking soda and mix together using your hands- add more water if required, the dough should be tacky but not wet
Step 3: Cut the dough over itself 2 to 3 times by stretching and folding it, then let the dough rest for 30-60 minutes
Step 4: On a floured surface, cut the dough into 3 equal sized balls, wrap each ball in cling film and refrigerate- these balls will last approx. 5 days in the fridge
